Biff’s Spicy and Smoky Chipotle Southern Slaw Recipe
A fresh and crunchy smoky, creamy and slightly spicy chipotle southern slaw, perfect in burgers or on a BBQ plate
Makes 2 Side Servings or 4 Burger Portions
SMOKY CHIPOTLE SOUTHERN SLAW
1/4 small red cabbage shredded
1/4 small white cabbage shredded
1 medium carrot finely cut into matchsticks or julienne
2 spring onions finely sliced
For The Dressing:
1/2 cup plain vegan yoghurt
1/4 Biff’s Maple Lime Chipotle BBQ Sauce
1/2 orange zest
1/2 orange juice
1/2 lemon juice
2 tbsp extra virgin olive oil
1/2 50g pack dill, leaves stripped and finely sliced
Big pinch salt
Big pinch pepper
Either using a mandoline if you’re feeling brave (always use the guard), or simply a sharp knife, finely shred your white and red cabbage, julienne your carrot into thin batons, add into a bowl with the spring onions and toss.
Mix all the dressing ingredients together, dress the slaw and leave to marinate for 10-30 mins in the fridge.
Serve as a side, or inside a burger for a tangy crunch.
BIFF-IT: Add in finely sliced fresh red chillies and red onion for a sharp and tangy kick. Finish with a sprinkling of smoked paprike and torn coriander. For a luxurious thick dressing, substitute the yoghurt for half-vegan mayo/half-vegan creme fraiche.
IN A JIFF-IT: Use a packet of pre-prepared slaw. For an even quicker dressing, use 50/50 vegan mayo and Biff’s Maple Lime Chipotle BBQ sauce.
