Jackfruit Caesar Salad Recipe
Our take on this classic salad with our Crispy Fried Jackfruit Burger, lashings of xtra creamy vegan Caesar dressing, crispy bacun bits and crunchy croutons.

JACKFRUIT CAESAR SALAD
2 Biff’s Crispy Fried Jackfruit Burgers
1 Romaine heart lettuce
1 rasher vegan bacun, finely sliced, or 2 tbsp vegan lardons
2-3 slices of sourdough bread
1 tbsp olive oil
Vegan parmesan cheese
For the Caesar Dressing:
3/4 cup vegan plain yoghurt
1 small clove garlic, minced
2 tbsp olive oil
1 tsp of english mustard
2 tbsp fresh lemon juice
2 tbsp capers in salty brine + 1 tbsp brine
2 tbsp nutritional yeast
1/4 cup your fave plant milk
1 tsp dried thyme
1 tsp maple syrup or sugar
Pinch sea salt, to taste
Cracked black pepper, to taste
Method
Preheat oven to 220°c / fan 200°c / gas 7.
Remove all packaging and place jackfruit burgers on a preheated baking tray. Cook for 26 minutes, turning halfway. Rest for 3 mins. Ensure product is piping hot before serving.
For the dressing add all of the ingredients to smoothie blender and mix until perfectly smooth.
Cut the bread in to rough 1/2 inch cubes, toss with olive oil in a mixing bowl, add to the oven on a baking tray for the last 10 mins of the jackfruit burger timing or until brown and crunchy.
Add the vegan bacon to a pan on a medium heat, fry in some oil for 5 mins until browned, but not burnt.
To serve; slice 3 or 4 romaine leaves thickly across the spines, add to each plate, scatter the croutons over the lettuce, slice the jackfruit burger into 1 cm cubes and distribute, scatter the crispy bacun bits and drizzle the dressing over. Finish with plenty of vegan parmesan cheese.
BIFF-IT: For a fancy plated version, cut the romain heart in half lengthways, rub some olive on the cut face and then grill face down in a hot pan until the surface is well browned. Serve the lettuce whole on the plate with all the other ingredients scattered over it.
IN A JIFF-IT: Buy pre-cooked croutons and use a store bought Caesar or ranch dressing – it’s gonna taste fresh either way!
